El Pacto del Alto Najerilla 2021

Appearance: Straw yellow of medium intensity, bright and luminous.

Nose: Complex, with notes of hay, cream and pastries, as well as hints of citrus in the background.

Palate: Long, with very good acidity and at the same time a lot of structure. It stands out for its great volume and unctuousness, the result of a complete maturation in the vineyard. A wine structured by its great acidity and rounded by its ample glyceric sensations.

Serving temperature: Between 7 and 10 °C.

Description: Old vineyards, located in the towns of Cárdenas and Nájera. At an altitude of around 600 metres.

Age: Planted between 1915 and 1974.

Soil: Clayey-ferrous with a high component of conglomerate rock at the base.

Climate: The 2021 vintage cycle in the Alto Najerilla was characterised by abundant rainfall in late spring and September. The arrival of dry anticyclonic weather in the final phase of ripening led to a dream harvest, somewhat shorter than in the previous vintage, with an unbeatable state of health, great balance, good concentration and aromatic richness.

Harvest: Handpicked on 20 September 2020.

Vinification: Maceration of whole bunches for 24 hours to achieve greater aromatic richness and volume in the mouth. Subsequent maceration for six hours with the skins and pressing. Static decanting and racking to remove the lees. Fermentation is spontaneous with the indigenous yeasts of the grape, at a low temperature (between 16 and 18 degrees). At the end of fermentation, the wine is transferred to an oak vat and bocoyes with a capacity of five hundred to one thousand litres.

Ageing: Half of the wine is aged for 8 months in a 5,000 litre oak vat and the other half spends a year in oak bocoyes of different capacities (between five hundred and a thousand litres) in contact with the fine lees.
